Tomato Shrub

A bright, savoury cocktail built around ripe tomatoes, echoing Marco’s belief that great ingredients deserve the spotlight. Fresh, culinary and wonderfully unexpected — a serve that brings together garden sweetness, acidity and the botanical depth of Mr White’s Gin.

Method

  1. Add the gin, tomato shrub, lemon juice and (optional) syrup into a shaker with ice.

  2. Shake well for 10–12 seconds.

  3. Strain into a chilled coupe or rocks glass with fresh ice.

  4. Add a small pinch of sea salt.

  5. Garnish with a cherry tomato or basil leaf.

The Seasoned Stalk

Clean, bright and quietly complex. Celery brings a refreshing savoury backbone that lifts the citrus and accentuates the Mediterranean botanicals in Mr White’s Gin.

Method

  1. Slice a long celery ribbon for garnish and set aside.

  2. Add sliced celery and lime wedges to a shaker, then muddle to release the juices.

  3. Add gin, lime juice and syrup.

  4. Add ice and shake well for 10 seconds.

  5. Strain into a tall glass filled with fresh ice.

  6. Top with soda water and stir gently.

  7. Garnish with a celery ribbon.

Beetroot Bramble

Earthy, vibrant and beautifully balanced — this is a savoury twist on a classic Bramble, with beetroot adding depth and colour while the botanicals of Mr White’s Gin bring floral lift.

Method

  1. Add gin, lemon juice, beetroot juice and syrup into a shaker with ice.

  2. Shake well and strain into a rocks glass with crushed (or cubed) ice.

  3. Drizzle Crème de Mûre over the top.

  4. Garnish with a fresh blackberry.

Mushroom Martini

Rich, earthy and quietly luxurious. Dried mushrooms infuse the gin with deep umami notes, creating a Martini that feels adventurous yet beautifully refined — a late-autumn classic.

Method

  1. Steep a handful of dried mushrooms in the gin overnight.

  2. Fine strain the infusion and chill.

  3. Stir gin and vermouth with ice for 20 seconds.

  4. Strain into a chilled Martini glass.

  5. Garnish with a lime twist.

Pumpkin Sour

Seasonal, silky and warming — the Pumpkin Sour brings together autumn spice, natural sweetness and the elegant citrus profile of Mr White’s Gin. A comforting but elevated cocktail, made for crisp evenings.

Method

  1. Add gin, pumpkin purée, lemon juice, syrup and egg white to a shaker (no ice).

  2. Dry shake for 10 seconds to emulsify.

  3. Add ice and shake again until chilled.

  4. Strain into a coupe glass.

  5. Garnish with grated nutmeg or pumpkin spice.
