SAVOURY SEASONAL COCKTAILS
Tomato Shrub
A bright, savoury cocktail built around ripe tomatoes, echoing Marco’s belief that great ingredients deserve the spotlight. Fresh, culinary and wonderfully unexpected — a serve that brings together garden sweetness, acidity and the botanical depth of Mr White’s Gin.
- 50ml Mr White’s Gin
- 30ml tomato shrub (tomato, vinegar, sugar infusion)
- 15ml fresh lemon juice
- 10ml simple syrup (optional, depending on tomato sweetness)
- Pinch of sea salt
- Ice
- Garnish: cherry tomato or basil leaf
Method
Add the gin, tomato shrub, lemon juice and (optional) syrup into a shaker with ice.
Shake well for 10–12 seconds.
Strain into a chilled coupe or rocks glass with fresh ice.
Add a small pinch of sea salt.
Garnish with a cherry tomato or basil leaf.
The Seasoned Stalk
Clean, bright and quietly complex. Celery brings a refreshing savoury backbone that lifts the citrus and accentuates the Mediterranean botanicals in Mr White’s Gin.
- 50ml Mr White’s Gin
- 20ml freshly squeezed lime juice
- 15ml simple syrup (adjust to taste)
- 60g sliced celery (plus extra for garnish)
- 2 lime wedges
- Soda water (100–120ml)
- Ice
Method
Slice a long celery ribbon for garnish and set aside.
Add sliced celery and lime wedges to a shaker, then muddle to release the juices.
Add gin, lime juice and syrup.
Add ice and shake well for 10 seconds.
Strain into a tall glass filled with fresh ice.
Top with soda water and stir gently.
Garnish with a celery ribbon.

- 20ml beetroot juice (from cooked, not pickled beetroot)
- 15ml sugar syrup
- 10ml Crème de Mûre

Shake well and strain into a rocks glass with crushed (or cubed) ice.

- Lime twist
Method
Steep a handful of dried mushrooms in the gin overnight.
Fine strain the infusion and chill.
